Περίληψη

Postharvest treatment of Cretan organic fruits and vegetables by ozone application in order to achieve pesticide degradation and microbial inactivation in addition to their quality improvement by means of the control of ripening time, optimization of storage conditions either during their remaining at storage installations or at long term transportation was investigated.For this purpose, ozone was applied to eighteen Cretan organic farming fruits and vegetables. The selection criterion was the exportation interest to the foreign market, both European and international. An experimental integrated system was developed which was consisted by: a) the ozone system apparatus for the production, control and measurement of ozone concentration and b) a series of prototype storage chambers equipped by detectors for real-time monitoring of humidity and temperature. The system was controlled remotely by using self made sophisticated software for the operation of ozone application and detectors monitoring. The experiments were conducted using a specified methodology according to a well defined protocol of operation which included storage and maintenance conditions, duration of the ozone application and also its concentration, physiology parameters of the products such as weight change (before and after ozone application), shape and texture change by systematic monitoring of their morphological evolution and observation of fungal growth. The protocol also included microbiological analysis,(pathogenic microorganisms and heavy metals) after ozone application. The results showed high applicability of ozone by means of microbial degradation down to inactivation in combination with quality control and also the extension of life cycle of the products. The collected data of this work were recorded to a suitable database and this was done for the first time to our knowledge for this kind of experiments to Greece for Cretan organic farming agricultural products
